Food You Must Try in New Orleans

A little while back, a good friend of mine went on a student exchange from Australia to New Orleans, USA. With both of us being foodies, we had a good long discussion about Southern food. I have to admit, I didn't recognise half of the words that came out of her mouth. So, I've been doing some research. Now I've been daydreaming about going on a culinary tour of the city and have compiled a bucket list of food to try.
1. Gumbo
The official dish of Louisiana! Gumbo is a combination of meat or seafood, vegetables, roux, rice and spices. It's kind of like a thick soup or stew. As my good friend Nada told me, every person has their different take on the recipe, so no two dishes of Gumbo are the same.
2. Crawfish
Crawfish is almost a staple ingredient in this city. It can be served a number of ways but two popular methods are boiled or as Crawfish Étouffée (another stew with crawfish, roux, vegetables and herbs, served over rice).
3. Jambalaya
Likened to the Spanish paella, jambalaya is yet another rice dish made with chicken, sausage or seafood and seasoning, cooked up in one big pot!
4. Beignets
Think fried dough sprinkled with icing sugar, in a square shaped piece of heaven.
5. Po' boy
A long sandwich made with French bread and topped with meat and sometimes salad.
6. Boudin
Boudin includes a mixture of ground pork, rice and spices stuffed into sausage casing. It's generally served as a sausage or as deep-fried balls.
